Healthy Pea Soup
Here is a pea soup recipe that is not only delicious but it is cheap, very easy to make, and very healthy. Green peas are a good source of thiamin (vitamin B1), vitamin B6, riboflavin (vitamin B2), and niacin (vitamin B3), vitamin C, vitamin K, iron, folic acid, and many more nutrients. Ingredients 3 cups of frozen green peas 2 medium leeks 3 medium to large potatoes I clove of garlic 6 cups of vegetable broth Salt and ground black pepper
Directions Wash and chop the leeks and potatoes into small pieces and them add 4 cups of vegetable broth into a large pot; heat until it boils and then, turn it down to simmer. It takes about 10 to 15 minutes for the potatoes and leeks to get soft. Add the green peas, garlic (after if has been chopped), 2 cups of vegetable broth, and then allow to cook for another 3 to 5 minutes. You can blend all the ingredients in a blender if you like or you can serve this delicious chunky pea soup right from the pot.Enjoy!
